Kitchen Wins: Best breakfast ever?

Our last Sunday morning breakfast really ended up as one of our best. We had a final round of Kodiak Cakes mix left to make some protein boosted pancakes, using a 1/2 cup of our farm-fresh unpasteurized local milk. Using milk makes the pancakes a bit creamier and fluffier! We also made a round of collard greens with onion and pickled garlic to go under our fried eggs, topped with big parmesan shavings.

While Aaron cooked the greens, I worked on turning some farm fruit finds into a topping for the pancakes. I took half a rolenia (lemon-custard type taste), two small papayas, and a guava and combined them in a bowl with some salt and tablespoon of honey. I used a stick blender and voila! Fruit compote type syrup to go on our pancakes. Of course we had some citrus lying around also, so we juiced a couple grapefruit, four mandarin oranges and a navel orange as our breakfast beverage.

Farm cooking was truly our highlight of living on Kauai. I’m not sure anything will compare to having farm fresh fruit and vegetables on hand every day!
