22 May Spring farming @ Peaceful Earth Gardens
We’ve been super busy during our fist month back in Taos @ Peaceful Earth Gardens. The greenhouses are bursting with varieties of lettuce, spinach, kale, chard, mustard greens, broccoli, onions, shallots, cilantro, thyme, bok choy, and beets, all ready for daily harvest! Sure does make for a killer salad or sautéed greens!

There are more and more varieties of plants popping up all over the 5-acre property here. One of our new favorites is Lovage – native to Europe, is becoming monstrous — even another 6-12″ taller than these photos! Lovage can be substituted for celery in any cooking, is great for digestion and treatment of kidney stones. It’s got a stronger flavor, and grows much easier than celery!

All of the above are examples of things ready to harvest — but we’ve been transplanting a lot each week also!
Several varieties of onions, several beds of strawberries, young bushes of elderberry, black currant, red currants, blackberries, raspberries, have all been carefully dug up from their seasons’ past resting beds, and put into new prepped beds to help rotate the crops. For example, the strawberries were dug up and moved, the onions and sunchokes went into the old strawberry beds.

We have a multitude of new seedlings getting ready in the greenhouses and cold frame boxes, can’t wait to watch them all grow!
